Its doing Windows Health on each server

The error is returned by Microsoft on the WMI call.
A Google search shows that it can be related to a lack of RAM causing the error for WMI.
Other searches seem to point to an issue with the WMI writer.
If you have a support agreement with Microsoft, then you can contact Microsoft as this is an issue reported to ServersCheck by Microsoft's WMI system

The issue is related to Servercheck. Even though the web interface works its not monitoring anything anymore. If I turn off a server that it is monitoring it still shows it being on. The checks are frozen.

The error message comes from WMI and is generated by Microsoft - the software displays it - the software has nowhere in the code such messages programmed.
The checks not being performed is a different issue.
Run the monitoring_thread2.exe in debug mode and copy the output generated after the first 2 minutes as a reply.
